Potato mosaru bajji / Potato mixed with yogurt



Hello :) Today the 19th recipe of my Wish List gets fulfilled :) and I'm happy about that :)
It is an extremely simple side dish made of potatoes and yogurt. We have it with rice at home. Simple, yet it is appetizing :) I prepared it for lunch today :) Usually I don't make it spicy but today I added more green chillies to it and it tasted better than ever :)

Here goes the recipe :)

Ingredients: (For three people)

3 Medium sized potatoes

2 large green chillies

2 cups of yogurt

Salt to taste


Seasoning

Vegetable oil (For seasoning and shallow frying)

½ tsp Mustard seeds

½ tsp Cumin seeds

½ tsp Urad dal

1 Red chilly

Few curry leaves


Method:

Chop the green chillies very thin as shown below.



Boil the potatoes ina pressure cooker and peel the skin off. Add it to the chillies as shown below.



Add salt to taste. Now mash the mixture with hands till you get the form as shown below.



Add the yogurt to this mixture and stir well. :)



Now, prepare the seasoning. Heat 2 tsp of oil. Add urad dal, mustard seeds, cumin seeds, red chilly and curry leaves. Allow the mustard seeds to pop. As it stops popping pour the seasoning over the potato and yogurt mixture.

Ice cream dessert / My experiments with ice cream


Ice creams are probably the most loved dessert by all age groups. I even see elderly people long for ice creams :) I just admire the way ice creams are. Cool by temperature, Quick while melting, a soft texture, a wonderful taste and so on :) Today's recipe is something which I tried on the spot as soon as I reached home from college :) It is summer now and my Dad usually gets home the Mangalorean Ideal ice cream family pack :) He too feels the urge of having ice creams these days :)

I made this quick dessert and learnt several lessons from it since I was trying it for the first time :) I'll share certain tips at the end of this post. For now let me start off with the recipe making :)

Ingredients: (For a single person)

3 scoops Ice cream (preferably family pack, any flavour will do)
2 Chocolate bars (Cadbury dairy milk or any other dark chocolate)
1-2 Butter biscuits
4-5 whole Cashew nuts
1 medium sized Banana

Method:

Crush the butter biscuits to powder. Let some of the biscuit be in chunks. Chop the bananas. Melt the chocolate. (I've mentioned the way to melt chocolate in the later part of this post.) Chop the cashews and roast them. Keep these things ready before hand.

Now, take a bowl which can hold at least 3 scoops of ice cream. Add the chopped bananas.


Next add only some of the crushed biscuits.


Next you need to cut shards of chocolate using a knife and put it over the crushed biscuits.


Next, add 3 scoops of ice cream, and on top of it add remaining crushed biscuits. Add the remaining chocolate shards. Then add the melted chocolate. You need to add one whole bar of melted chocolate. Then add the fried cashew nuts. The yummy dessert is ready to be relished!!! I still can't forget its taste. :)



How to melt chocolate?



Boil water in a container. Keep the chocolate pieces in another bowl much smaller than that of the first one. Keep the smaller bowl floating on the boiling water and it starts melting. DO NOT MELT THE CHOCOLATE DIRECTLY OVER FLAME. IT BURNS AND GIVES AN AWFUL SMELL. ( You can add 2 to 3 spoons of milk for a bar of dairy milk chocolate.)

Banana + chocolate

I had actually come across many recipes that mix chocolate and banana. But I used to not find the combination good. I didn't know how the taste would be. I used to deny the that it would taste good! But today after I tried this combo I just fell in love with the taste. :) It gave a good flavour altogether. Do try this out :)

Banana rasayana / Bale hannu rasayana

Greetings to all of you.. :D :D

I prepared a rasayana (you can call it as a dessert) I used to prepare it when I was a kid too. That means kids can also try this out. In fact most of my recipes can be tried out by children too. They're so easy. :)I've seen many of them prepare this dessert in many different ways. I have my own style of making it :)

Here goes the recipe. :)

Ingredients: (For three people)

3 medium sized bananas (ordinary ones will do)
6-7 tsp Sugar
3 Glasses of milk

Method:

Chop the bananas as shown in the snap below.


Add all the sugar over it.


Mix both the ingredients with a spoon (preferably). Mix it gently. Don't put all your energy and mash the bananas. Just mild moves are enough.


Stop the mixing when it comes to consistency as shown below. Sugar automatically dissolves. No need to worry about it.


Now add milk little by little and stir the mixture gently. Add all the milk in this fashion by stiring the mixture gently.


Rasayana will look like this. See to it that you don't add too much milk and make it watery. Let it be creamy in texture. Serve it chilled always.


You can have it as it is, or you can have it with chapathis.

Apple milk shake

These days temperatures rise severely. I'm usually not happy with summer seasons. I complain a lot about everything during summer. Summer season is one this in this world which turns me off... :@ I usually look for ways where in I could cool my mind :) Just now I thought of having a cool milk shake :) I looked through the refrigerator for an apple. I prepared milk shake out of it :) And I took snaps of it while making it so that I can post it in here :) Pardon me for the poor snapshots.. :( Not very good at capturing images :P But I've tried my best :)

Ingredients: (For two people)

1 Apple

5 tsp sugar

2 glasses of milk


Method:

Chop the apples as shown in the snap below.

Add these chopped apples into a blender with sugar and a glass of milk.



Mix all the contents in a blender till it looks like this picture below.

Strain the mixture in a strainer and remove the solids in the mixture. (This is required since there will be small peices of apple skin which won't taste good. Tip: You can peel the apples before chopping them to avoid this step. )

After straining the mixture, you'll get a fine paste. Now add the remaining milk to this and stir well. (No need of using blender now)



Serve chilled. Apple shake is ready to be served :)

Tomato and Onion chutney/gojju




Greetings to all you readers out there... :)
It has been quite a long time since I've posted any of my cooking experiences :) Today I prepared one of my favorite side dishes i.e. Tomato and onion chutney or you may call it gojju in terms of Kannada. It is a tangy recipe that tickles my taste buds :) I love it in spite of its simplicity in its ingredients.
The recipe goes as follows.

Ingredients: (For three people)

2 medium sized onions
2 medium sized tomatoes
3-4 Green chilies
2 tsp red chilly powder
½ tsp garam masala
½ tsp turmeric powder
½ tsp sugar
Salt to taste

Seasoning:

Vegetable oil (For seasoning and shallow frying)
½ tsp Mustard seeds
½ tsp Cumin seeds
½ tsp Urad dal
Few curry leaves

Method:

Chop the green chilies, onions and tomatoes. Heat 2 tsp of oil. Add urad dal, mustard seeds, cumin seeds and curry leaves. Let the mustard seeds finish their popping. Now add chopped onions and the green chilies. Fry them until they become soft and lightly brown. Add the tomatoes. And leave it to cook for 5 minutes on a medium flame and close the vessel with a lid.
After 5 minutes, add red chilly powder, turmeric powder, garam masala, sugar and salt. Mix them well and let it cook for about 10 minutes on a medium flame. After its cooked, serve hot with chapathis or you can have it with rice or curd rice.
